Ingredients

Yogurt 250 gm (whipped)

Eggplant 1

Lemon 2

Potato 2 (boiled and cut like French fries)

Carrot 2 (cut in rounds)


Capsicum 2 (cubed)

Green chilli 4

Peas 1 cup (boiled)

Spring onion 2 bunch (finely cut)

Cottage cheese 500 gm (cubed)

Broad beans 10 (cut in halves)

Cauliflower 1 head (remove flowers)

Curry leaves 10

Turmeric powder 1 tsp

Red chilli powder 1 tbsp

Ginger/garlic paste 1 tbsp

Gram flour 4 tbsp

Salt to taste

Oil for frying

For Tempering:

Red chillies 6 (whole)

Fenugreek 1 pinch

Curry leaves few

Cumin seeds 1 tsp

Mustard seeds 1 tsp

Instructions

Roast tempering ingredients in a pot without adding oil.

Put lemon juice, gram flour, turmeric, red chillies, ginger/garlic paste and salt in yogurt and thin it.

Strain yogurt mixture, add to tempered ingredients and cook.

Bring to boil, add green chillies, carrots, eggplant, peas, potatoes, spring onions, broad beans, cauliflowers and capsicums.

Heat oil in frying pan, fry cheese and add to yogurt mix.

When vegetables are tender add salt and put on dum.

Serve hot with rice.
