Ingredients

INGREDIENTS,
Mutton 3 kg,
Ginger garlic paste2 tbsp,
Coriander leaves½ bunch,
Papaya paste2 tbsp,
Yogurt (thick)250 gm,
All spice powder1 tsp,
Cumin powder1 tsp,
Chaat masala1 tsp,
Dry mango powder1 tsp,
Cumin seeds crushed1 tsp,
Turmeric1 tsp,
Crushed red pepper1 tsp,
Chili powder1 tsp,
Saltto taste,
Oilfor fry,
Muslin clothas required,
Vinegar4 tbsp,

Instructions

METHOD
Marinate 3 kg mutton with a little salt, 2 tbsp raw papaya paste and 4 tbsp vinegar. Keep aside for 20 – 25 minutes.
In a bowl mix together 250 gm thick yogurt, 1 tsp all spice powder, 1 tsp cumin powder, 1 tsp chaat masala powder, 1 tsp dry mango powder, 1 tsp crushed cumin seeds, 1 tsp turmeric, 1 tsp crushed red pepper, 1 tsp chili powder, ½ bunch of chopped coriander leaves, 2 tbsp ginger garlic paste and salt to taste. Mix very well.
Now coat fried mutton pieces with the yogurt mixture, put in steamer and cook for 20 – 25 minutes.
Remove in a serving platter and serve hot.
