Orange-Vanilla Frosting

Why recepie famous for?

I’m always up for something pumpkin, not every orange Halloween treat needs to be squash-flavored! These orange Halloween cupcakes are the perfect pumpkin alternative! They taste just like a Creamsicle: a tantalizing combination of smooth vanilla and juicy orange fruit.

Ingredients

1 cup butter, room temperature
8 ounces cream cheese, softened
5 cups icing sugar
1 teaspoon orange extract
1/2 teaspoon vanilla extract
1/2 teaspoon orange extract
Orange food coloring
2 Tablespoons orange sugar crystals
12-24 Pumpkin icing decorations, optional

Instructions


STEP TWO: In a medium mixing bowl, stir together the flour, baking powder, baking soda, and salt. Set aside.

STEP THREE: In a large mixing bowl using an electric hand mixer or a stand mixer, beat the butter and sugar at medium speed until light and fluffy. Add the eggs, orange extract, vanilla extract, and orange juice.

STEP FOUR: Fold in half of the flour mixture, combine, add 1/4 cup of buttermilk, combine, and then repeat with the remaining flour mixture and the remaining buttermilk.

STEP FIVE: Fill the cupcake liners 2/3 full with the batter. Bake for 15-17 minutes or until a toothpick inserted in the center comes out clean.
