Why recepie famous for?
This 20-minute meal is amazing any time of year, with spicy shrimp layered on top of a crunchy cabbage–bell pepper mix. Although chipotle chile lends a fabulous smoky flavor to the dish, chili powder is a suitable stand-in if you don't have it.
Ingredients
1/4 small green cabbage1 red bell pepper
1/2 small White Onion
1/4 c. fresh lime juice (from 2 to 3 limes)
2 tbsp. olive oil
Kosher salt and pepper
1 1/2 lb. large shrimp
1/2 tsp. ground chipotle chiles or chili powder
8 small flour tortillas
Instructions
In a large bowl, combine the cabbage, bell pepper, onion, lime juice, 2 Tbsp oil, 1/2 tsp salt and 1/2 tsp pepper. Let sit, tossing occasionally, for at least 5 minutes.Heat the remaining tsp oil in a large nonstick skillet over medium-high heat. Season the shrimp with the chipotle chiles and 1/2 tsp salt; cook until opaque throughout, 2 to 3 minutes per side.
Fill the tortillas with the shrimp and the slaw.
