Ingredients

Cottage cheese (paneer) cut into 1½ inch cubes 400 grams
Processed cheese grated 1 1/2 tablespoons
Hung yogurt 2 tablespoons
Mayonnaise 1 tablespoon
Gram flour (besan) 1 tablespoon
Ginger-green chilli paste 1/2 tablespoon
Salt to taste
Green cardamom powder 1 teaspoon
Lemon juice 1 tablespoon
Medium green capsicum cut into 1½ inch pieces 1
Medium red capsicum cut into 1½ inch pieces 1
Medium yellow capsicum cut into 1½ inch pieces 1
Onion rings to serve
Lemon wedges to serve
Green chutney to serve

Instructions

Step 1
Take processed cheese in a bowl, add yogurt, mayonnaise, gram flour, ginger-green chilli paste, salt, cardamom powder and lemon juice and whisk well.
Step 2
Preheat the oven to 180°C and grease a baking tray.
Step 3
Add cottage cheese cubes, capsicum, red bell pepper and yellow bell pepper in the prepared mixture. Mix well and let them marinate for 10-15 minutes.
Step 4
Insert the cottage cheese cubes and coloured capsicum pieces onto skewers in the following order – red capsicum pieces, cottage cheese cube, yellow capsicum piece, cottage cheese cube, green capsicum pieces, cottage cheese cube and red capsicum piece.
Step 5
Place the skewers in the baking tray and keep the tray in the preheated oven. Bake for 15-20 minutes.
Step 6
Serve hot with onion rings, lemon wedges and green chutney.
