Ingredients


180g butter, chopped, softened
1 egg, at room temperature
2/3 cup caster sugar
2 cups plain flour, sifted
1 teaspoon baking powder
1 cup chopped dates or mixed dried fruit
1 cup cornflakes, crushed

Instructions


Step 1
Preheat oven to 180°C. Line 2 baking trays with baking paper.
Step 2
Using an electric mixer, cream butter and sugar until pale. Add egg and mix well. Fold in flour, baking powder and a pinch of salt. Gently stir in dates. Form teaspoonfuls of mixture into balls. Roll balls in cornflakes.
Step 3
Place pearl cakes on trays, allowing room for spreading. Bake for 20 minutes, swapping the trays after 15 minutes, or until golden. Cool on wire racks. Serv
