Ingredients

Large potatoes 3-4
Thai red curry paste 1 tablespoon
Red chilli paste 1 tablespoon
Salt to taste
Coconut milk 3-4 tablespoons
Lemon 1
Honey 2-3 teaspoons
Lemon juice to drizzle

Instructions

Step 1
Cut potatoes into wedges without peeling.
Step 2
Put Thai red curry paste, red chilli paste, salt and coconut milk in a bowl and mix well. Grate some zest of lemon into the bowl. Add potato wedges and mix till the potatoes are well coated.
Step 3
Add honey and mix well. Place these wedges in single file in air fryer basket and fry at 200º C for 5 minutes, then reduce the temperature to 180º C and fry for 5 minutes more.
Step 4
Transfer onto a serving plate drizzle a little lemon juice and serve hot.
