BBQ Chicken Pasta Salad

Why recepie famous for?

Let combine the flavor of bbq chicken and pasta into tempting salad. BBQ Chicken Pasta Salad is great in parties and as light lunch.

Ingredients

Penne pasta 400 gm
Chicken breast 1 (boneless)
Salt and pepper to taste
Carrots finely sliced (blanched) 1 large
Pineapple cubes 1 cup (finely cut)
Sweet corns 1 cup
Green onion ½ cup (finely chopped)
Fresh cream ½ cup
Mayonnaise 2 tbsp
Paprika powder ½ tsp
Brown sugar
Hot chili sauce 1 tbsp
Sweet chili sauce 2 tbsp
Lemon juice 1 tbsp
BBQ sauce 2 tbsp
Oil as required

Instructions



Cook Penne in the boiling water until done, ideally it should not exceed 8 minutes.

Drain and toss with a little oil and set it aside.

Marinate chicken breast with 2 tsp oil, salt and pepper and set aside.

Mix together carrots, pineapple, sweet corns and green onion and refrigerate them for at least 1 hour.

Heat griller pan, brush the pan with oil and grill chicken boneless meat on both sides for 4-5 minutes on medium flame until chicken is cooked and tender.

Transfer chicken to a baking sheet and bake until cooked through for about 5 minutes on 180 C, keep turning and tossing the chicken during the baking process so that it is equally done from both sides.

Mix together fresh cream, mayonnaise, paprika powder, hot chili sauce, sweet chili sauce, lemon juice, salt, pepper and whisk well.

Coat grilled chicken breast in BBQ sauce.

Now in the serving bowl mix together penne pasta, cream mixture and vegetables.

Top it up with grilled boneless chicken breast sprinkle some paprika on top and serve.
