Ingredients

Potatoes boiled, peeled and grated 3/4 cup
Pavs 8
Pav bhaji masala 2 tablespoon + to sprinkle
Oil 2 tablespoons
Medium onions finely chopped 3
Ginger-garlic paste 1 tablespoon
Medium tomatoes finely chopped 3
Tomato paste 1 tablespoon
Carrots boiled and mashed 1/4 cup
Medium green capsicum finely chopped 1
Salt to taste
Butter 1 tablespoon + as required
Fresh coriander leaves finely chopped 1 tablespoon
Lemon wedges a few

Instructions

Step 1
Heat oil in a deep non-stick pan. Add half the onions and sauté till lightly browned.
Step 2
Add ginger-garlic paste and sauté for a minute. Add tomatoes and mix well. Add tomato paste and mashed carrots, mix well and cook till tomatoes turn soft and pulpy.
Step 3
Add salt and 1 tablespoon pav bhaji masala, mix well and cook for 2 minutes. Add potatoes and mix well. Add a little water, mix well, cover and cook for 2 minutes.
Step 4
Add capsicum and mix well. Add some more water and remaining pav bhaji masala, mix well and simmer for a minute.
Step 5
Add butter and coriander leaves, mix well, cover and simmer for 5 minutes.
Step 6
Slit the pavs horizontally, apply some butter and sprinkle some pav bhaji masala on them.
Step 7
Serve with hot bhaji, remaining chopped onions and lemon wedges
