Using pantry staples like 2-minute noodles, corn kernels, eggs and cream, these budget-friendly savoury cups are perfect for the lunch box or as an afternoon snack.

Ingredients

85g bowl Fantastic chicken noodles
3 eggs
1/2 cup thickened cream
1/3 cup fresh or frozen corn kernels
1/2 red capsicum, deseeded, finely chopped, plus extra to sprinkle *optional
1 spring onion, trimmed, thinly sliced, plus extra to sprinkle *optional
2/3 cup cheddar cheese, coarsely grated

Instructions

Preheat oven to 180C/160C fan forced. Line six (80ml) muffin pans with paper cases.
Prepare the noodles following packet directions. Drain.
Beat together the eggs and cream in a bowl. Stir through the corn, capsicum, spring onions and half of the cheese. Divide among the lined muffin pans and sprinkle with the remaining cheese. Bake for 20 minutes or until cooked through and golden. Serve sprinkled with extra capsicum and spring onions if desired.
