SeaFood Fettuccine"This is a basic alfredo sauce, but with less fat and calories than most. Use your favorite seafood or chicken - both work very well with this recipe."
Ingredients
fettuccine 500 gSpicy seafood sauce:-
Solive oil 1tbsp
Onion 1
Red pepper
Clove garlic 1
Red chilli, seeded and finly chopped 1
Cumin ½ tsp
Ground coriander ½ tbsp
Canned tomatoes 14 oz
Undrained and mashed
White wine ¼ cup
Tomato paste 1tbsp
Calamari, cut into ring 155 g
Cleaned fresh mussels in shells 155 g
Uncooked large prawns, 500 gram
Chopped 4tbsp
Black pepper to taste
Instructions
To make sauces heat oil in large saucepan and cook onion, red pepper garlic, chilli, cumin and ground coriander for 3 minutes or until onion is soft. Add tomatoes wine and tomato paste and cook over a medium heat for 30 minutes longer or until sauce reduce and thickensadd calamari to sauce and cook for 5 minute or until just tender . add mussels and prawns and cook for 4 minutes longer mix in 2 tablespoon fresh coriander. Taste with black pepper
Cook fettuccine in boiling water in a large saucepan following packet direction,
Drain the spoon sauce over fettuccine and sprinkle with remaining fresh coriander.
