Ingredients

300 g chicken thigh, skin-on, boneless

For the teriyaki sauce:
1 tbsp mirin
1 tbsp sake
1 tbsp soy sauce
1 tbsp sugar

4 lettuce leaves
vegetable oil

For the rice buns:
360 g cooked short-grain rice (2 microwavable rice packets)
a few drops of sesame oil
mayonnaise

For the sauce:
1/2 tbsp soy sauce
1 pinch of sugar

Instructions

1. Butterfly the chicken thigh to give it a uniform thickness.


2. Oil and preheat a frying pan, then add the chicken, skin side down. Place a small lid on top of the chicken, and fry for 6 min.


3. Once the skin side has browned, turn the chicken over, and blot up the oil in the pan.


4. Make the teriyaki sauce: Mix together the teriyaki sauce ingredients, then pour into the frying pan. When the sauce begins to bubble, spoon it over the chicken to coat.


5. When the sauce begins to thicken, remove the chicken and cut it into slices 1 cm thick, then place it back in the frying pan and coat with the remaining sauce.


6. Make the rice buns: Microwave one of the microwavable rice packets for 2 min, then divide it in half, and shape to form two circular “buns” from the packet of rice.


7. Oil a frying pan with sesame oil and preheat. Fry the rice over low heat for 4 min, then turn over and fry for an additional 3 min.


8. Make the sauce: Mix together the soy sauce and sugar, then apply the sauce to both sides of the rice using a brush.

9. When the rice becomes crunchy and fragrant on its surface, remove and place on a serving dish. Top one rice bun with mayonnaise, lettuce, and chicken teriyaki, then place another rice bun on top to complete the rice burger.
