Creamy Citrus Mexican Corn Salad

Lemon, lime, mayo and two cheeses flavor this Creamy Citrus Mexican Corn Salad that goes deliciously with anything from the grill!

Ingredients


5 ears fresh corn shucked
1 Tablespoon vegetable oil
1/4 cup mayonnaise
zest from 1 lime
juice from 1 lime
zest from 1 lemon
juice from 1 lemon
1/4 tsp. dijon mustard
1 clove of garlic pressed
1/4 cup cotija cheese crumbled
1/4 cup queso fresco cheese crumbled
1/3 cup cilantro minced
1/4 tsp. chile powder

Instructions


Pre heat a grill to medium high.
Brush corn with 1 Tablespoon vegetable oil
Grill corn for 8 - 12 minutes, turning frequently until the corn is lightly charred and tender.
Remove corn from grill and cool.
While the corn is cooling, combine the mayonnaise, lime zest, lime juice, lemon zest, lemon juice, dijon mustard and garlic in a small bowl.
Whisk to combine.
Cut kernels off of corn cobs and place in a medium bowl.
Add the mayonnaise mixture and stir to combine.
Add the cheeses and cilantro and gently stir.
Dust the top of the salad with the chile powder
