Sparkling ring cookies

Why recepie famous for?

Roll out, roll out... wonderful sweet dough for the kids to cook cookies for kids' party bags!

Ingredients


125g butter, softened
1/4 cup caster sugar
1/2 teaspoon vanilla extract
1 egg
1 1/2 cups plain flour
1/4 cup custard powder
1 1/2 tablespoons pink sprinkles
4 tablespoons cachous (silver, pink, blue, green)
8 jubes

Step 1
Using an electric mixer, beat butter, sugar and vanilla for 5 minutes or until light and fluffy. Add egg. Beat until combined.
Step 2
Sift flour and custard powder over butter mixture. Using a wooden spoon, stir to combine. Divide dough in half. Knead sprinkles into dough. Press each half into a disc. Wrap in plastic wrap. Refrigerate for 15 minutes.
Step 3
Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.
Step 4
Divide each disc into 4 portions. Roll 1 portion into a 35cm log. Shape into a figure 8 with a smaller round at 1 end (see picture). Join dough together. Place 1 jube on top, pressing to secure to form a jewel. Decorate with cachous. Repeat with remaining dough portions, jubes and cachous.
