Step 1
Preheat oven to 180C/160C fan-forced. Line 2 large baking trays with baking paper.
Step 2
Using an electric mixer, beat butter, sugars and vanilla until light and fluffy. Add eggs, 1 at a time, beating until well combined.
Step 3
Sift flour and baking powder over butter mixture. Using a wooden spoon, stir until combined. Roll level tablespoons of mixture into balls. Place on prepared trays, 2cm apart, to allow room for spreading. Press
Step 4
1 freckle into the top of each cookie to form a 4.5cm round. Bake for 12 to 15 minutes, swapping trays halfway, or until light golden. Cool on trays for 5 minutes. Transfer to a wire rack to cool completely. Serve.
