Ingredients

Green chilies ½ kg

Onions 3

Tamarind juice 1 cup

Coconut 1 small piece

Onion seeds 1 tsp


White cumin 1 tbsp

Ginger garlic paste 1 tbsp

White sesame seeds 2 tbsp


Coriander seeds 2 tbsp

Poppy seeds 2 tbsp

Salt to taste

For baghar:

Tamarind juice 1 cup

Oil 1 cup

Whole red chilies 4

Few curry leaves

Few fenugreek seeds

White cumin 1 tsp

Instructions

Add white cumin, white sesame seeds, coriander seeds, poppy seeds and small grated coconut piece to a tawa or a pan and stir together.

Then take off the flame and crush them together.

Wash green chilies and put on a sieve to drain away excess water.

Sprinkle some salt over green chilies.

In a cooking pot, heat some oil and stir fry green chilies.

Then take out green chilies and add whole red chilies, few fenugreek seeds, few curry leaves and white cumin and stir together.

Also fry sliced onions until they are transparent.

Then add turmeric powder, ginger garlic paste, sautéed spices and green chilies, salt to taste, curry leaves, tamarind juice and onion seeds.

Allow simmering on low flame until oil forms a separate layer.

Mirchon ka Salan is ready to serve.
