Chocolate Almond and Coconut Vegan Fat Bombs

Ingredients

1 cup shredded unsweetened coconut, divided
1/2 cup melted coconut oil
1/2 cup almonds, finely chopped
1/2 cup coconut milk
1/2 cup chopped Medjool dates
1 tablespoon low-calorie natural sweetener (such as Swerve®)

Instructions

Blend 1/2 cup shredded coconut, coconut oil, almonds, coconut milk, dates, and sweetener in the bowl of a food processor until creamy, about 2 minutes. Freeze until set, about 15 minutes.
Shape mixture into 1-inch balls; roll into remaining 1/2 cup shredded coconut.
