Packed full of wholesome ingredients, this cranberry and lemon quinoa slice won't leave you running on an empty tank.

Ingredients

1 3/4 cups quinoa flakes
3/4 cup plain flour
1/2 cup firmly packed brown sugar
1/2 cup chopped dried apricots
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1 tablespoon finely grated lemon rind
1 cup dried cranberries
100g butter, chopped
2/3 cup honey
1/3 cup milk
2 eggs, lightly beaten

Instructions


Step 1
Preheat oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
Step 2
Combine quinoa, flour, sugar, apricot, baking powder, cinnamon, lemon rind and cranberries in a large bowl.
Step 3
Place butter, honey and milk in a saucepan over medium-low heat. Cook, stirring, for 3 minutes or until smooth and combined. Add to quinoa mixture. Stir to combine. Add eggs. Stir to combine. Spread into prepared pan. Smooth top. Bake for 20 minutes or until firm. Cool. Cut into bars. Serve.
