Why recepie famous for?

It does't get more Australian than this marshmallow and Iced VoVo slice!

Ingredients

1/3 cup condensed milk
125g butter
250g Arnott’s Arrowroot plain biscuits
20 Iced Vovo biscuits
STRAWBERRY MARSHMALLOW
1/2 cup caster sugar
1/2 cup hot water
3 tsp powdered gelatine
1 tbs lemon juice
1 tsp strawberry essence
1 splash pink food colouring *to taste

Instructions

1 Line a 19cm x 29cm (base measurement) slice pan with baking paper, allowing the 2 long sides to overhang.
Place condensed milk and butter in a small saucepan over medium heat. Cook, stirring, for 2-3 minutes or until smooth and combined. Remove from heat.
Using a food processor, process plain biscuits until fine crumbs. Transfer to a bowl. Add hot butter mixture. Mix well to combine. Press mixture over the base of prepared pan. Cover. RefMeanwhile, make the strawberry

marshmallow. Combine sugar and half the water in a saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar dissolves and syrup is clear. Using a fork, combine gelatine and remaining water in a jug. Pour into hot syrup. Cook, stirring, for 2-3 minutes or until gelatine has dissolved and mixture is clear. Pour into bowl of an electric mixer. Stir in lemon juice and strawberry essence. Set aside to cool to room temperature (about 30 minutes).rigerate for 2 hours or until firm.
