Vegetables In Plum Sauce

Ingredients

Yellow zucchini cut into 1 inch pieces 1 medium
Green Zucchini cut into 1 inch pieces 1 medium
Snow peas 10-15
Broccoli separated into florets 1/2 small
Green capsicum cut into 1 inch pieces 1 small
Yellow capsicum cut into 1 inch pieces 1 small
Red capsicum cut into 1 inch pieces 1 small
Chinese cabbage cut into 1 inch pieces 1/4
Tofu 200 grams
Plums chopped 10-12
Green chillies chopped 2-3
Ginger paste 2 teaspoon
Garlic chopped 4-5 cloves
Five spice powder 1/4 teaspoon
Orange marmalade 2 tablespoons
Red chilli sauce 1 teaspoon
Salt to taste
Honey 3 tablespoons
Oil 2 tablespoons
Salt to taste
Cornflour/ corn starch 4 tablespoons
Chilli oil 2 tablespoons
Vinegar 1 tablespoon

Instructions

Step 1
Puree plums and put into a deep non stick pan. Add green chillies, ginger paste, garlic, 5 spice powder and orange marmalade and mix. Add red chilli sauce and mix.
Step 2
Add ¼ cup water and salt and mix again. Add 2 tbsps honey and mix well. Add ¼ cup water and mix. Cook on medium heat.
Step 3
Heat oil in a non stick wok. Cut tofu into 1 inch cubes.
Step 4
Add yellow and green zucchini and snow peas to the wok along with broccoli, coloured capsicums, Chinese cabbage and tofu and mix well.
Step 5
Mix cornflour with 3 tbsps water and add some of it to the plum sauce.Toss the vegetables and add salt and toss again. Strain the plum sauce over the vegetables and toss.
Step 6
Add some of the cornflour mixture and mix well. Add chilli oil, vinegar and remaining honey and mix well. Serve hot.
