Ingredients

4 Eggplants
Ingredients for marinara sauce:
2 cups Tomato (puree)
1 tbsp Garlic (chopped)
1 tbsp Red chili flakes
1 tbsp Basil (fresh)
Salt to taste
1/2 tsp Black pepper powder
1 tbsp Italian seasoning
2 tbsp Oil
1/4 cup Ketchup
Ingredients for cheese filling:
1/2 cup Parmesan cheese
1/2 cup Cheddar cheese
1/2 cup Mozzarella cheese
Salt to taste
1/2 tsp White pepper
1/2 cup Cream
1/2 tbsp Oregano (crushed)

Instructions

Directions for marinara sauce:
In a pan heat oil and sauté garlic in it for a minute.
Then add tomato puree, chili flakes, salt, black pepper, Italian seasoning and ketchup.
Cook on medium low flame for 10 to 15 minutes or until you reach your desired consistency.
Direction for cheese filling:
In a bowl a cream, parmesan, cheddar, mozzarella, salt, white pepper and oregano.
Mix all these things well and your cheese filling is ready.
Assembling:
Cut eggplants and grill them for 3 minutes each side.
Then take eggplant fill in the cheese mixture and make rollups.
Now take a baking dish spread marinara sauce then place eggplant rollups.
Now bake it for 10 to 12 minutes on 180 degrees and serve hot.
