Filipino-Style Chicken Curry

Why recepie famous for?

A Filipino-style chicken curry with peanut butter and coconut milk. My mom's best recipe ever! Serve with white rice.

Ingredients


1 tablespoon vegetable oil

1 pound skinless, boneless chicken breast halves, chopped

1 stalk lemongrass, sliced

1 onion, sliced

1 cup chicken stock

1 cube chicken bouillon

2 cloves garlic, minced

1 ½ cups coconut milk

1 large potato, sliced

1 carrot, sliced

1 tablespoon curry powder

1 red bell pepper, chopped

2 tablespoons peanut butter

salt and pepper to taste

Instructions


Step 1
Heat vegetable oil in a saucepan over medium heat. Add chicken and cook until brown, about 10 minutes. Stir in lemongrass, onion, chicken stock, chicken bouillon, and garlic. Bring to a boil; reduce heat and simmer for 5 minutes. Add coconut milk, potatoes, carrots, and curry powder. Simmer until potatoes and carrots are tender, about 20 minutes. Stir in bell pepper, peanut butter, salt, and pepper.
