Kids will love these easy-to-eat sushi sandwiches.
Ingredients
185g can tuna in springwater, drained, flaked
1/4 cup mayonnaise
1 teaspoon lemon juice
1 green onion, thinly sliced
6 large slices high fibre white bread, crusts removed
1/2 Lebanese cucumber, cut into ribbons
1/2 avocado, thinly sliced
Instructions
Step 1
Combine tuna, mayonnaise, lemon juice and onion in a bowl.
Step 2
Place bread slices on a chopping board. Using a rolling pin, flatten bread slightly. Top with tuna mixture, cucumber and avocado. Roll up to enclose filling. Thickly slice each roll into 4 pieces. W
