Ingredients

500 g (1 lb) Tomatoes, skinned, seeded and chopped
1 small onion, chopped
1 olive Garlic, crushed
½ Teaspoon Celery Salt
1 Teaspoon Tomato puree (paste)
1 Teaspoon white wine Vinegar
3 Teaspoons powered gelatin
Salt and pepper
TO FISH:
7.5 cm (3 in) piece Cucumber, peeled and dIced
¼ green pepper (Capsicum), seeded and dIced
2 sticks Celery, dIced
Mustard and cress, to garnish

Instructions



Put tomatoes, onion, garlic, celery salt, tomato puree (paste) and vinegar into a saucepan and simmer until soft and pulpy. Sieve mixture into measuring jug.
Sprinkle gelatin over 4 tablespoons water into a small bowl and leave to soften for 2-3 minutes stand bowl in a saucepan of hot water and stir until dissolved. Allow to cool, then stir into the tomato mixture, making up to 625 ml (20 fl oz/ 2 ½ cups) with water if necessary. Season with salt and pepper. Pour into 4 individual 155 ml (5 fl oz/ 2/3 cup) ring moulds and refrigerate until set.
To turn out, dip each mould into a bowl of hot water for a few seconds, then invert onto a serving plate.
Arrange diced vegetables around each jelly and serve garnished with mustard and cress.
