Why recepie famous for?
High in fibre and low in saturated fat, these healthier muesli bars make a great lunchbox filler.
Ingredients
1/2 cup vegetable oil1/4 cup honey
1 teaspoon vanilla extract
1 egg
1/2 cup firmly packed brown sugar
1 1/2 cups wholemeal plain flour
1 1/2 cups traditional rolled oats
1 teaspoon mixed spice
1/2 teaspoon bicarbonate of soda
1/3 cup dried cranberries
1 1/3 cups frozen raspberries
Instructions
Step 1Preheat oven to 190C/170C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm above long sides.
Step 2
Whisk oil, honey, vanilla and egg in a jug. Combine sugar, our, oats, mixed spice and bicarbonate of soda in a bowl. Make a well in the centre
Step 3
Press two-thirds of the oat mixture evenly over base of prepared pan. Sprinkle with cranberries, raspberries and remaining oat mixture. Bake for 20 to 25 minutes or until golden and set. Cool completely in pan. Cut into bars. Serve.d oil mixture. Stir to combine.
