Lamb Tacos with Herbed Yogurt and Heirloom Tomatoes

Ingredients

omatoes
1 1/2 lb. heirloom tomatoes
1 tbsp. balsamic vinegar
1 tbsp. extra-virgin olive oil
1/2 tsp. Kosher salt
1/4 tsp. Freshly ground black pepper
Herbed Yogurt
1 c. plain Greek yogurt
1/4 c. chopped fresh herbs (cilantro, dill, or parsley)
1/2 tsp. Kosher salt
1/4 tsp. Freshly ground black pepper
Lamb
1 1/4 lb. ground lamb
4 tsp. Dijon mustard
4 tsp. Worcestershire sauce
2 tsp. garam masala (an Indian spice blend available at supermarkets)
3/4 tsp. Kosher salt
1/2 tsp. Freshly ground black pepper
1/4 tsp. crushed red pepper flakes
1 tbsp. extra-virgin olive oil
12 corn tortillas
1 1/2 c. Shredded romaine lettuce

Instructions


Tomatoes: Combine all ingredients in a medium bowl.
Herbed yogurt: Blend all ingredients in a food processor until mixture turns pale green. Scrape into a small bowl.
Lamb: Combine lamb, mustard, Worcestershire sauce, garam masala, salt, black pepper, and red pepper flakes in a large bowl until blended. Set a large, heavy skillet over medium-high heat until hot. Add oil and swirl to coat skillet. Add lamb mixture and cook, stirring frequently to break it up, until browned, about 6 minutes. Pour off fat.
Spread tortillas with herbed yogurt and top with lamb, tomatoes, and lettuce.
