Fiery Lamb Chops With Black Olives for

Ingredients

Lamb chops 6 (double cut)

Olive oil as required

Worcestershire sauce 1 ½ tbsp

Balsamic vinegar 1 tbsp

Garlic 3 cloves (chopped fine)

Oregano ½ tsp (dried)

Salt to taste

Black pepper to taste (crushed)

Butter 2 tbsp

Fresh red chili 1 (deseeded and chopped fine)

Juice and zest of 1 lemon

Black olives 12 (sliced)

Red chilies to taste (crushed)

Instructions

Flatten and trim lamb chops of any excess fat.

In a bowl whisk the balsamic, Worcestershire, olive oil, garlic, salt, pepper and crushed red chilies until well combined, stir in the oregano, lemon zest and lemon juice.

Marinate chops with this mixture for 30 minutes or overnight.

In pan add the butter along with 1 tbsp olive oil and place the chops on high heat reserving the marinade.
Cook until meat on either side till lightly browned.

Decrease the heat. Add the olives and reserved marinade and cook along with 2 – 3 tbsp water until meat is tender.
Add the red chili, cook for a further minute and then serve with lettuce or along with

some potatoes.
