Chicken Avocado Cilantro Soup

This chicken avocado cilantro lime soup is the perfect cold weather fix. It’s packed full of vegetables, spices, rotisserie chicken and topped with creamy avocado. It’s ready in just 35 minutes so it’s the perfect weeknight comfort meal.


1 tablespoon olive oil
1 cup bell pepper (diced)
1 cup yellow onion (diced)
2 jalapeño peppers (seeded, minced)
3 garlic cloves (minced)
1 teaspoon chili powder
2 limes, juiced (½ cup)
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
32 ounces low-sodium chicken stock
3 cups cooked chicken (shredded)
1/3 cup cilantro (minced)
4 fresh avocados (halved, pitted, peeled, cubed)


In a large soup pot, add olive oil over medium-high heat. Once the oil is hot, add bell peppers, onion and jalapeño. Cook until the onion is translucent and the vegetables are starting to soften.
Add garlic, chili powder, smoked paprika and cumin. Stir to combine and cook for another 30 seconds just until the garlic is fragrant.
Add chicken stock and shredded chicken. Bring to a boil and then lower the heat and simmer for 15 minutes to help combine the flavors.
Right before serving, add the cilantro and lime juice and stir to combine.
To serve, add cubed avocado to a bowl and spoon the soup over top.
