mushroom and tarragon stroganoff

Why recepie famous for?

This super-quick and easy mushroom and tarragon stroganoff makes for a great, healthy midweek meal, ready in just 15 minutes and under 300 calories

Ingredients

onion 1, diced
spray olive oil
half-fat crème fraîche 3 tbsp
garlic 1 clove, crushed
chestnut or button mushrooms 150g, sliced
tarragon ½ bunch, chopped

cooked wild rice or mixed grains to serve

Instructions

STEP 1

Fry the onion in a spray of oil for about 5 minutes, until soft.Add the garlic and mushrooms and fry for another 5 minutes, with another spray of oil, until the mushrooms are golden and the liquid has been released from them and cooked off. Add the crème fraîche, a splash of water (or stock) and tarragon, simmer for 1 minute, season and serve with cooked grains.
