Mandi Masala Ingredients
10 gm Coriander seeds
10 gm Cumin
5 gm Black pepper
5 gm Star Anise
5 gm Green Cardamoms
5 gm Cinnamon
5 gm Black Cardamoms
5 gm Fennel seeds
Chicken Mandi Ingredients:
2 TBSP Mandi Masala
Salt (As Needed)
2 TBSP Vinegar
1 TBSP Red Chili Powder
1 TBSP Ginger Garlic Paste
2 TBSP Crushed Red Chili
2 TBSP Lemon Juice
1 KG K&Ns Whole Chicken
3 Liter Hot water
Mandi Rice Ingredients:
4 TBSP Cooking Oil
2 Onions (Chopped)
1 TBSP Ginger Garlic Paste
20 gm Raisins
25 gm Cashew
3 Green Chilies (Chopped)
Salt (As Needed)
1 TBSP Cumin
0.5 Liter Water
2 K&Ns Stock
500 gm Soaked Rice
1 TSP Yellow Food Color
1 Ember Foil


Put all these ingredients in a cooking pan, fry those for a while then grind them well.
Mandi Masala is ready.
Chicken Mandi Directions:
Put Mandi Masala (2TbSP) in a bowl. Also add salt, Vinegar, Red Chili Powder, Ginger Garlic Paste, Crushed Red Chili, Lemon Juice, & mix well then set aside
Put K&Ns Whole Chicken in a bowl & pour the above prepared mixture at this chicken. Apply well with the help of a brush & refrigerate for 2-3 hours
Place this marinated chicken in a steamer by adding warm water, & steam for 35-40 minutes
Mandi Rice Directions:
Add cooking oil in a pan, then add onions, ginger garlic paste, raisins, cashews, green chilies, salt, cumin, then fry well
Add water, K&Ns Chicken cubes then cook for a while. Then add soaked rice
Cook until all the water is absorbed then add yellow food color and Steam for 10 minutes
Put the chicken at the surface of the rice. Place an Ember foil by adding cooking oil (1 TSP).. Then cover it for 2-3 minutes
